Ingredients
- 1 lb ground beef
- 1 onion, chopped; optional, can be left out
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp ground mustard
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbsp minced garlic
- 2 tbsp ketchup
- 2 tbsp mustard
- 2 tbsp pickle juice
- 1 1/2 cups beef broth
- 1 cup jasmine rice, rinsed, uncooked
- 8 oz tomato sauce, one can
- 1 1/2 cups Colby Jack cheese, shredded; about 1 cup stirred in, the rest on top
- 2 green onions, chopped, for topping

Heat a large skillet over medium-high heat. Brown the ground beef with the chopped onion.

Season with salt, pepper, ground mustard, onion powder, garlic powder and smoked paprika. Drain any extra grease.

Add the minced garlic, ketchup, mustard and pickle juice. Stir well.

Add the rinsed uncooked rice, beef broth and tomato sauce. Stir well.

Bring to a quick boil, then reduce heat to medium-low. Cover and cook 15–20 minutes, until the rice is tender.

Stir in about 1 cup of the cheese and sprinkle the rest on top. Let sit until melted, or broil for about a minute.

Top with chopped green onions and serve.

We call this cheeseburger rice and it takes less than 30 minutes from start to finish. You can make it all in one pan, just cook a pound of ground beef with onion seasonings and if your kids don't like onions, no big deal, just throw them out. And now that you're kid-free, you could just go out to eat, but if you're still cooking, you're adding ketchup, mustard, pickle juice, jasmine rice, beef broth, and tomato sauce. Now it's going to cook covered over medium low heat for about 18 minutes before you stir in your cheese, and it's time to eat.
